Thinking outside the box in sushi-making, you can actually fix yourself a tasty meal or snack. I don't have a rolling mat, I don't have a rice cooker, or the little wooden bowl required to "properly" fix the rice. I don't even have the correct rice or vinegar! I am using apple-cider vinegar, and regular California brown rice. I let the rice dry a little bit on a cookie sheet, put some sesame seeds and a small amount of the vinegar on it, and took a sheet of nori, (ripped, but I cut it in the direction of the tear, making it just a scoring line,) and proceeded to wrap the rolls very easily. And there it is! It it tastes fine! The only reason it would not taste fine, is if you compare it to impression in your mind, of what sushi "should" taste like.
By no means am I bastardizing the artistic profession of the sushi chef, but I just want you readers to realize that doesn't have to be as far away as you think, and you don't really need any special materials. Sometimes all that's to it is to do it.
